Synergy | Blended Barrel Aged Imperial Stout | 13.0% ABV | 500mL

Synergy is a blend of barrel aged imperial stouts: 60% imperial stout aged 24 months in Booker's Bourbon barrels and 40% imperial stout aged 22 months in ex-Buffalo Trace organic maple syrup barrels.

The idea behind Synergy was to create a blend of barrel aged stouts that have a combined effect that is greater than the sum of its parts. In this case, the stout that had aged in maple syrup barrels was straight milk chocolate, rich and fudgy, but lacked spirit, barrel and complexity. The stout aged in Booker's Bourbon barrels was also thick and chocolatey but the barrel was too assertive with too much wood and spirit character. The two were the perfect pairing and after trying multiple blends at different ratios we settled on a 60/40 blend.
